Attention!!!

We had a crazy thing happen in our household yesterday...

Tony left his flipflops out in our bedroom.

I came home to one sitting on the living room rug.

IT HAD NOT BEEN EATEN.

Someone please return my dog.

Heartbroken

I am hesitant to write about this, but maybe it will help me vent, as if Gina and I's emails haven't helped enough.

Yes, Frank Martin is gone.

Yes, I'm mad, sad, disappointed, pissed, and every other emotion possible.

KU goes to the Final 4 and we lose our coach.  Worst season ever.  I'm really hoping my friends that live in Manhattan will take my advise and egg the shit out of Frank and/or Currie's house/car/driveway/yard/family.

Loyalty my ass.

Bitter much? Maybe.  But I'm also still bitter about buying a Huggieville shirt for the game before Huggins left us.  Then I was happy with Frank.  Will that happen again?  I hope so.

What I don't appreciate, is Frank
1.) leaving
2.) most likely taking players with him
and
3.) stirring up talk about how Currie is impossible to work for (even if it's true)

None of those help us out what.so.ever.  Oh and let's add in him not even having the decency to tell the team in person.  Selfish.

I also just learned yesterday that S. Carolina is in the SEC.  Get Real.  I am so over the SEC.

My purple work clothes are currently being retired to the side of my closet until we have some closure on the situation that is disastrous.  And the picture of Tony, Frank and I on my desk has turned into a dart board with my thumb tacks.

I may or may not have tweeted Frank to #suckagamecock

Don't even get me started on that mascot.  Emily googled it and informed me that it is an actual bird, not a made up fairy, like a jayhawk.

Vegetarian Lettuce Wraps

I've had a few requests for this recipe.  Overall I thought it was very good, and Tony loved it.  Who knew??

I got the original recipe from Pioneer Woman's blog.

Here's a little fun story to go with it.  I ran to the grocery store over lunch to pick up the ingredients.  I could not find tofu for the life of me.  As I'm checking out - please keep in mind that I choose my cashiers very carefully based on how speedy they look - I asked the guy if they carry it.  He calls another worker over to go grab it while he checks me out.  Here's how our convo went...

Cashier- 'why do you want tofu?  You look like a sensible gal.'

Me - I'm trying out a new recipe and I've never bought it before which I why I couldn't find it.

C - Well, it's not real food.

(I'm just staring at him)
C- anything with soy in it isn't real food. It's a form of birth control....

Me - (confused effing look on my face, then the lady brings it to me and I set it on the belt)

He goes on for about 10 minutes telling me about why it's bad, how it's made, where it's from. Meanwhile, the people in line behind me start leaving!! He would NOT shut up. Then he wrote a website down on my receipt so I could go online and read about it.  Yes sir, I'll get right on that.

C- well I hope your meal is good... if you come back sometime we can discuss it more.

Um, I can promise you the next time I go to Walmart, I'm using the self checkout....

If you are still interested in the recipe, here it is.  And don't go to the neighborhood market to buy your tofu.

Ingredients

2 teaspoons Peanut Or Olive Oil

1 package (about 12-14 Oz. Size) Firm Tofu

1 1/2 Cups Frozen Corn Kernels

1/4 teaspoon Chili Powder (more To Taste)

1/4 cup Soy Sauce

Red Pepper Flakes (I used a lot, it needed some heat!)

Romaine Lettuce Hearts

2 whole Avocados, Sliced

1 teaspoon Balsamic Vinegar (optional)

Preparation Instructions

Heat oil in a nonstick skillet over medium-high heat. Throw in the tofu, then break it up into very small pieces. Cook tofu for several minutes, until much of the liquid cooks off and tofu starts to turn golden.

Throw corn in with the tofu. Cook for a few minutes.
Add chili powder and soy sauce, then cook until most of the liquid has been absorbed. Turn off heat and stir in balsamic if using.

Pile mixture into romaine hearts, then add slices of avocado. Fold up and chow down!

Roasted Cabbage

I made a new side dish last night.  Straight from Pinterest.  Well, I adapted it a little.

I can tell you that I will be making it a lot.  It was super easy and my husband loved it.  Win-Win.

Here's the recipe:
1 head of cabbage - cut into wedges (big or small)
Olive Oil
Lemon Juice
S + P
Balsalmic Vinegar (optional)

Preheat oven to 400.  Drizzle olive oil on rimmed baking sheet, arrange wedges, drizzle wedges with a little more olive oil and lemon juice.  Sprinkle with salt and pepper.  Bake for about 40 minutes.
After they were done, I drizzled balsalmic vinegar over them b/c I love it.  I bet if I would have reduced it, it would have been even better.

Yum!!!  Tony said he didn't know cabbage could taste that good.  I'm not sure he's ever had cabbage, but it exceeded his expectations which is a plus.  I fed him tofu lettuce wraps last week, and he liked those too.  It's fun changing his mind about certain foods... we're still working on mushrooms.

Spelling Bee

I actually consider myself a good speller.  I also get annoyed when people use bad punctuation, but that's not today's topic.

Saying this, there are a few words that I always spell wrong.  Most of the time I google them to get the right spelling if I don't have access to spell check.

The main one is definitely.

I have no idea why this is so hard for me.  Seriously.  I have been known to spell it definatly, definitly, definately, etc.

Gina saved my life today by teaching me a trick.  Definitely.  The last part is spelled like Italy, but with an E.

Genius!  Now I can go about my day.  But not without first pointing out the fact that Gin made this up last week.  Apparently neither of us won the spelling bee in grade school....

A Little Q&A session

Thanks to Lauren, I have something to blog about!

I was tagged as part of a "Get to Know You" series for bloggers. In order to participate, you're supposed to share 11 things about yourself, and then answer the 11 questions that the blogger wants to know about you.

11 things about me.  Here We Go!!  (Bud Light Commercial insert here)

1.  I watch entirely too much television.  Anything that has to do with reality tv or people being kicked off? I'm in.  Any trashy guilty pleasure tv? I'm really in.  Anything on Bravo?  Absolutely.  I secretly hope my friends and I could star in the Real Housewives of KC someday.  In all reality, I just want to meet Andy Cohen and be besties.

2.  I am deathly afraid of sharks.  To the point I won't go in the ocean past my knees and about had a mental breakdown when Tony made me go on the catamaran in Mexico.  It's weird, I know, but I would rather jump out of a plane with a parachute than scuba dive.  Emily told me the other day that you are 100 times more likely to die from being stepped on by a cow, than you are to be eaten by a shark.  I'm not sure where this stat came from, but I do find it ironic that I live in Kansas...

3.  I wish I was more active.  I want to be one of those people who love to run, go the gym, or even walk the dog.  I'm just not.  I love playing sports and doing entertaining things, but to just put on my Uggs tennies and go for a run is not my thing.  As I get older, and my love handles grow substantially, I feel like I should make the change soon.

4.  I love love love my new job.  Not to sounds like one of those annoying people... but I really do.  I'm doing the same thing for the same boss basically, but we are in a new office, new enviornment, and around a lot of fun people.  It makes me realize how much a good work enviornment can really make a difference.

5.  I've never worn red lipstick.  I really wish I could pull it off, but I'm more of a clear glossy kind of girl.

6.  I'm super embarrassed that my husband is a dentist and I have terrible teeth.  I had braces in middle school, got a retainer I never wore, and then got invisaline in College that I didn't finish.  I wish they were straighter and prettier.  It's like an automatic response whenever someone asks what my husband does, I tell them, and they look directly at my mouth.  Womp.

7.  I hate fried chicken.  Hate it.

8.  My favorite vegetable is okra.  Fried okra to be specific, which kind of takes the healthyness out of it.

9.  If I wasn't named Callie, I was going to be KC.  Which is now my friend's dog's name.  While Callie is still a dog name, I'm glad she picked that one.

10.  In general, I'm an opptomistic person.  I like to always hope for the best and think everything is going to be okay.  Some (my husband) would like to say I'm not a realist.  Example:  K-State could be down by 10 in a game with 2 minutes left and I'm still holding out for the upset.  I don't give up easily.

11.  I don't really like going to the movies.  I would much rather rent one, pour a glass of wine, and sit on my couch.

Now for the questions from Lauren:
1. Whole Foods or Traders Joes?
TJ's totally.  Only the one in Missouri b/c of the wine.  Duh.

2. If you could sing one song in front of a large audience, what would it be and why?
No questions asked - Vanilla Ice.  I'm quite the rapper when I'm wasted, or so I think.  If there's Kareoke, I'm singing Vanilla Ice.  Get out of my way.

3. Would you rather lose all of your old memories, or never be able to make new ones?
Ew, I don't like this question.  If I had to chose, it would be to make new ones.  That's hard!!

4. Who or what inspires you and why?
My mom.  She is a superwoman.  She is so active, busy, creative, and yet always makes time to be there and help other people.  She's never put herself before anyone, and I appreciate her so much.  Love you mom!!

5. If Abe Lincoln and George Washington got into a fight who’d win?
I have NO idea.  Since Abe's nickname was 'honest Abe', I would like to think he would, but the first president would probably put up a hell of a fight.

6. If you could go anywhere in the world, where would you go?
Back to the Greek Islands.  Beautiful and stunning.  Or Ireland.  Amazing pubs.

7. What do you think would be the hardest thing for you to give up on?
Marriage.  (Lol- that's not supposed to sound bad, I'm just meaning that no matter what would happen, it would be the hardest.)

8. Would you ever consider being a contestant on the Bachelor?
This is so funny considering when I went to the auditions with Emily, we both ended up in the article in 435 South Magazine.  And yes I was already married.
I'm not sure I could handle it.  I don't like catty mean girls, or crazies.  And I'm not really all about fighting for a guy's attention.

9. Glee or Smash?  Glee.  I'm so behind by a few seasons though...

10. If you could be a superhero, what would you want your superpowers to be?
To travel wherever in the speed of light.  Basically like Dorothy on the Wizard of Oz.  I could handle wearing pumps everday.

11. Coffee or tea?
Tea.  I'm currently having a cup as I type.

Now the 11 questions, I want you to answer:
1. Favorite moment in College?
2. Have you ever bought anything from Etsy?
3. Favorite Pinterest project or recipe?
4. What is your favorite sound?
5. If you could throw any kind of party, what would it be like and what would it be for?
6. If you had to change your first name, what would you change it to?
7. Which celebrity do you get mistaken for?
8. What’s the worst gift you’ve ever received?
9. What story does your family always tell about you?
10. If you won a shopping spree of your choice, what store would you choose?
11. Channing Tatum or Bradley Cooper?

As of Late

Hello, it's been awhile.  Here's what's been going on with my life lately.

The damn white dog has been loving getting up in the middle of the night like she's a puppy again.  She goes 8-10 hours without peeing all of the time, but lately she's been getting up every.single.night. This, in turn, causes Tony and I to argue on who is going to let her out.  I prefer to wait and see if she'll go back to sleep, while Tony gets up the second she does.  I love you dear, but you are a push-over.  And Margo, if you don't stop waking us up in the middle of the night, I'm going to kill you.  Clearly I'm ready for kids...

I left work early yesterday with a temperature.  Back at it today.  I'll be damned if I'm missing jeans Friday and my short afternoon.  It's my fav :)

We got a new bed.  It was my Valentine's Day gift.  Since the beast princess sleeps with us, the only logical thing to do would be to get a bigger bed, right?  It's a memory foam one.  I love it.  Tony isn't sold.  And it must make Margo want to wake up in the middle of the night.

My car is fixed.  After a pretty penny, she no longer sounds like an airplane taking off.  She is a new woman.  Happy, Clean, and Pretty.

Tomorrow I'm heading to Omaha to see my lovely friend Christy.  Ever since I received this iterary on Monday, I can't stop smiling.  Omaha, here we come!!!

Omaha Itinerary

The below itinerary is pretty thrown together and I will continue to work on it as the week progresses. Please feel free to add any thoughts, opinions, etc.

02/25/12

• Arrive in Omaha without getting lost: ?????

• Hang-out, watch K-State game and catch-up 12:30 tip off
• Afternoon Drinking: ????

• Get ready for dinner: ????

• Party Rock: ????

Places to Go (places can be inserted throughout the above itinerary):

• The Homie Inn: Also referred to as The Homie. This little gem is located in a place that I can never seem to find. With champagne on tap you would think this is a classy place, however it is just a dark little bar where you can get pitchers of champagne.

• Crescent Moon: This bar has two areas. Above where there is sometimes karaoke and the basement. The basement is the place to be. Offering up what is called “das boot”, a very large boot that you drink out of. Do not drop the boot or they will charge you $50. If you have ever seen Beerfest, you will know exactly what “das boot” is if not just imagine a huge glass boot filled with German beer.

• Jimmy D’s: Located within walking distance of my apt is about the only cool thing going on in this bar. With large tvs and shuffle board it would be a good place to stumble in and out of either at the very beginning or very end of the night.

• Blue: A sushi bar that has a great reverse happy hour. With their bloody mary martini you will be dancing the night away for sure. I can’t guarantee that you will remember it but trust me its delicious.

Happy Valentine's Day!

We have big plans that involve our couch, sweatpants, pizza, and wine.  I can't wait!!

Have a Happy Valentine's Day!

A story for the weekend.

I'm only blogging about this because my dear friends requested it of me...
and I'm never too proud to make fun of myself.

Last night I took Margo for a run.  I use that term 'run' loosely.  I won't even tell you the last time I 'ran', mainly because I don't remember.

Oh your waiting for the important part of the story?  It's not that I was completely out of breath, fainted, or got lost.

................ I wore my UGG's.

Running in UGG's keeps my feet warm, despite the ridicule from my husband and friends.

I bet my form was stellar.

Did you notice?

Anyone else notice the familiar face on the Ceasar's Palace commercial??

Oh Courtney, I still hate you.  And all of your weird facial expressions and multiple personalities.

Wine Barn

A couple of weekends ago we did something super fun and different.  Emily had bought a Groupon to the 'Wine Barn' out by Bashor for 10 people.  Seeing as though it was located far away and we would be 'tasting' wine for 2 hours, we decided that it would probably best to have some sort of transportation.  We booked a limo and we were ready to rock.

When I received the email confirmation from the limo company, I noticed there was a bold paragraph at the end stating the rules.  No standing out of the sunroof and any articles of clothing left behind are not their problem.  No flashing from the top of the limo... we get it.

The Wine Barn was SO cute and quaint.  We were the only group there so we got a good run down of the wine... and multiple re-fills.

The provided lots of appetizers that paired with each type of wine.

I wish we could have seen the vineyard, but it was dark and cold.  I would love to visit when it's nicer out, they have live music and free tastings on the weekends.

We had extra time to drive around afterwards so we decided to make a stop at The Cashew for a quick drink.

Pouring wine in a moving vehicle is not the easiest thing.  It results in ivory coats looking tie-dyed.  You have been warned.

We ended the night back at our house for some games and night caps.

I wish we could do this every weekend!

Scotty McCreery, The Band Perry, and Brad Paisley

Last Thursday I headed down to the Sprint Center with my mom, aunts, and cousin to see Brad Paisley.  I didn't know until the week of that Scotty McCreery and The Band Perry were opening!

We hit up Willie's before the concert for some bevs (and chili cheese chips).  I love my family.

Before the concert these 3 middle school girls sitting in front of us asked if we cared if they stood up during Scotty McCreery.  We said that was fine, and the second he walked on stage they started screaming at the top of their lungs.  I was expecting them to start crying at any point in time.  It was adorable.  Adorable until we realized that the one girl right in front of us was the size of the tour bus.  There was no seeing around her, so we ended up standing too.  Which was fine in the end.  I sing better standing up :)

Scotty was a doll face, just as I had expected. What a great performer!  Side note- I'm stoaked that AI is back on.  Love me some Steven Tyler and J Lo.

The Band Perry rocked it.  I still love 'if I die young' even though it was extremely overplayed there for awhile.  She reminds me of Jennifer Needles from SugarLand. And I could listen to Sugarland all day long.

My mom always does this in pictures when she's right next to the camera...leans back with her chin pushed back, and then says 'how many chins did I have?'.  So we did a take two like this......

The crew

Brad came on with the best lighting effects.  He really put on a good show and I was surprised that I practically knew every song.  Don't worry, I definitely sang along.

Can I be any whiter??!!
Brad made his way out to the middle...

After being in the middle for awhile he ran around the floor and right in front of us.  Of coarse my camera was dead at this point.  Figures.
The last song of the night was 'Remind me'.  You know, the one he sings with Carrie Underwood.  Well, she CAME WALKING OUT ON STAGE.  My camera is still dead.
I heard a rumor it wasn't her, but her face was reflected on the jumbo tron and I know it was, even with the multiple giant beers in me.

Such a fun night with my family!

Good thing...

...that being a better blogger was not on my NYE resolution list.  In fact, nothing was.  I don't like to set myself up for failure or hold myself accountable for anything.  It's an issue in and of itself.

But I will show you what we did on NYE.  I'm only 20 days over due.  Forget the fact I haven't blogged about Christmas yet.

We reserved a table at Johnny's and they had NYE swag that consisted of hats, necklaces, and horns.  We even had our own fancy sign...

Side note- I walked in and said, 'we have a table under Gina Penka.'  The lady said 'well, we have a Gina Calhoon down'  Oh yes, Gin has been married for like 8 months...

Sorry for that last one.  Where else can you put pictures of you and your husband making out if not on your blog?

Hope everyone had a Happy New Year!  Bring on 2012.  I have a feeling it's going to be the best year yet!

Chalk up another vet bill

I swear anything and everything that can happen to a dog, has happened to ours.

Tony and I were organizing our basement for the first time since we have moved in (2.5 years ago), and Margo was running around in the backyard.  She came in and was licking her paw and we noticed a good amount of blood on her leg.  Tony held her up and I made the executive decision that it was definitely deep enough for stitches.  Lovely.

She ended up getting a few staples at the vet, but only after they had to put her out since she was too hyper (shocker).

The vet informed us that as soon as she came out of sedation, she started chewing on the bandage, so we would need to keep a cone on her.

She is less than thrilled...

I feel horrible that she has to wear the cone, she pouted and sulked around for a good 24 hours.  Now that she's getting used it, I'm starting to not feel as bad and find humor in it when she runs into every doorway in our house.
I came home over lunch today and she had gotten herself stuck in the bathroom.  I'm sure the cone pushed the door shut when she was trying to get back out.

I think the lesson learned is no more cleaning the basement for us.
