Best Valentine Ever

No, not because my husband and I had a romantic evening at home.  We didn't even get to that.  Too much info?  (Sorry mom/gmother.)

The Cats pulled off a win against KU and we were there to witness this:

So amazing to be there even though it made for a late night.  Totally worth it!  I kind of regret my last post being so negative towards my boys, but I think I had reason.  Even when we were up by 20 points, I was almost convienced that we were going to find a way to eff it up.  I was way too nervous to be excited.  I would stand up to yell, sit down, stand up, sit down.  All night.  I probably worked off my dinner.  The people behind me probably appreciated this too.  For the record, KU has a bunch of thugs on their team!  I've seen them play on TV, but being there in person is a whole other story, they are dirtaay!  Did I not tell you it would be like a hockey game??  Thanks Markeef Morris.  Nice upper cut.
Of coarse we forgot our real camera so these are courtesy of Tony's phone.

We started off the evening at Mr. K's with some bevs with friends

I find it fitting that Pullen is on the ticket for this one :)

I had the Greek pizza, full of artichokes, kalamata olives, banana peppers, roasted red peppers, and goat cheese.  The pizza's were heart shaped yesterday, but of coarse I dove in to eat mine and forgot to take a picture before I had devoured half of it.

We also had the crab and lobster fondue but I ate the whole bowl before I even thought about taking a picture.  Best thing I've ever eaten, still.  No lie.

Lindsay told us after the game that Frank, all the assistant coaches and their wives had rented the place out.  I got a text picture of her and Frank at 1:40 am.  Jealous much???  I really wish I could have stuck around and pretended to be a waitress.  Seriously.

We had such a great time and of coarse the win was a big part of that.  I even stayed awake and talked to Tony on the way home.  Normally I snooze in the passenger's seat.  Wife of the year.

Marg got to go to school during the day, but when we got home she got some love too...

And then she pouted a lot b/c she missed us so much...

And the icing on the cake, or more my style - the ranch on the pizza, the lime in the beer, was this purdy little gift from my hubs.

It's the only heart shaped piece of jewelry that he knew he could buy.  We've been making fun of those Kay jewelers necklace commercials for years. :)

And if you are keeping track, he received a new electric razor.  Like I said, wife of the year.

Hope everyone else had a wonderful V-Day!!!

Purple Valentine's Day

Happy Valentine's Day!

I kind of hate this holiday for multiple reasons.

1. Red and pink do not go together.
2. I don't like chocolate
3. All restaurants are packed
4. Flowers cost about as much as a new flat iron

Three years ago we started a little something with a few couples in lieu of celebrating this holiday, a progressive dinner.  It was on Saturday.  Post to come on that...

So how are Tony and I celebrating tonight??  I've already told you we are not traditional...

I have a date with my husband AND my boyfriend:

McGrudy my love
Tony's completely fine with it considering I'll be about 20 rows up from him.

Yep, we are heading to Manhappy for the KSU/KU game.  I'm jetting out of work at about 3:00 and we are heading west on I-70.  Hip Hip Hooray!!  We're meeting friends at Mr.K's for dinner and 'tailgating'.  Yes, I believe you can tailgate for any occasion, even if it's inside.

I don't have high hopes for the game since our big players seem to be dropping like flies. Really Curtis Kelly, you couldn't wait another 2 months to smoke some pot?? (However I think he gets to play tonight). But I'm just excited to go.  It's my first game this year!  Tony's been going a lot and meeting his dad there which is so fun for them, but I'm ready to cheer them on in person instead of from my couch.  Plus, it seems like whenever we play KU it's more like a hockey game on the court and I'm a big fan of Jam Sam when he's fired up.

Let's GO boys!!!  Kick some hawk ass!!!

Look for me on TV... I'll be the one trying to sit on McGruder's lap...

Kona my love

I met Krista and Gina at Kona on Wednesday for a much needed Happy Hour, or Happy Time as I like to call it.  It never seems to be just an 'hour'.

Great convos about jobs, cameras, vacations, and blogs.  Mostly about blogs.  How they rule our lives basically.

The waitress came to our table to let us know it was last call for Happy Hour drinks, so naturally we all ordered another round and ended up looking like this:

Yes, I realize my sweater looks like a turban.  I have no idea how to wear it.

Cheers to a wonderful time with wonderful friends!!

Flat Stanley

Have you ever heard about Flat Stanley?  It's a project for kids kind of like pen pals used to be, but it's based on a book.

Here's an explanation- The book is about a boy named Stanley who woke up one morning and he was flat.  (this makes me laugh) A bulletin board had fallen on him during the night while he was sleeping.  Stanley finds that he can use this to his advantage.  He is so flat that he can slip through the grating to get his mother's ring out of the sewer.  He also went to California by air mail in an envelope.

If you receive Flat Stan in the mail you are supposed to write a story about his adventure and then mail it back.

Here's what he looks like:

Tony's cousin Kim let us know that Flat Stan was on his way to Kansas from Oklahoma for Jace's preschool project.
Here's what she over heard Jace telling one of his friends:

"Well, Flat Stanley is on his way to Kansas....to be with a Doctor.  Just hope Margo does not eat him."

And then we also received this letter:

Legit worries with Margo, I told Kim I couldn't make any promises.

Marg was interested him...

But I think she thought Stan was her friend instead of her breakfast...

I'm not sure what would disappoint Jace the most.  The fact that Tony's not a real doctor*...Or if Margo ate Stan.

*I totally joke about this all the time.  I'm not a bitch.

Soup Du' Jour

Guess what was featured as a special at Mr. K's last week???

Pioneer Woman's  My tomato soup!!!  I think I can call it mine since I made some changes to it, right??

I'm wondering if Frank dined there last week?  I'm sure he did, and I'm sure he ordered the weekly soup special.  I'm sure it was his favorite and he asked for my number and he's going to call me any day now.

I'll keep you posted.   Until then, go make this soup!

Veg Cooking

I made black bean and pineapple enchiladas last night for din.  They were pretty wonderful!  Tony liked them too, which is good because we have a lot left over.  We both loved the fact that they were tasty, healthy, and not too filling like regular enchiladas.  I believe Tony made the comment 'I don't feel like a bloated fat man'.

Here's how you make 'em:

Saute 1 cup chopped onion, and one chopped red pepper in EVOO until tender.  Add rinsed/drained can of black beans, drained can of pineapple, can of green chilis, and some salt and peppa.

Then throw in some cheese and cilantro (I didn't use cilantro)

Spread a spoonful of enchilada sauce on a tort.

Do you like my winter plate?  Actually I think it's Emily's.
 Top with the veggie mixture.
My camera takes awesome pictures.
Roll 'em up and put into dish.  Like I said, it makes a lot.

Combine the rest of the enchilada sauce with 1/3 cup of reserved pineapple juice from the can and drizzle on top...

And try not to do this...

Top with cheese and Bake at 350 for 30 minutes covered in foil.  Remove foil and bake another 5-10 minutes.

See how many it made?  We are going to be eating these for days...
Tony's a lucky guy.

Yum
Then top with sour cream and eat up!  I also sprinkled the green tabasco sauce from Chipolte on mine.  I highly recommend that!
Disclaimer: It was not the exact bottle from Chipolte. I'm no longer in College and can afford to actually buy a bottle of it now.  Did anyone else used to steal those???  No? Just me??

Here's the full recipe:
1 cup chopped onion
1 cup chopped red bell peppa
1 (20 oz.) can pineapple tidbits, drained
1/3 cup pineapple juice, reserved
1 (15 oz.) can of black beans, drained and rinsed
1 (4.5 oz.) can of chopped green chilies
S & P to taste
1/2 cup fresh cilantro -I didn't use but it probably adds more flavor
3 cups shredded cheddar cheese (12 oz) - I used chedder and mozz b/c that's all I had
1 (10 oz.) can mild enchilada sauce - Next time I would probably kick it up a notch and go with hot.
8 whole wheat flour tortillas

Topping: Sour Cream, and Green Tabasco (not stolen from Chipolte)

Heat oven to 350, spray 13x9 glass dish with cooking spray.
Heat oil in skillet and saute onion and red pepper.  Add pineapple, beans, green chiles and S&P.  Cook until heated. Remove from heat and add cilantro and 2 cups cheese.
Spoon enchilada sauce onto eact tort.  Followed by veggies, then roll.
In a small bowl combine remaining enchilada sauce and the 1/3 c. reserved pineapple juice together.  Pour over all enchiladas, being careful not to spill all over your counter top like muah.
Top with cheese.  Bake 30 minutes covered and then 5-10 minutes uncovered.

Eat your heart out.

Super Bowl & Super Baby

Besides the funny commercials and Jordy Nelson helping the Packers win (hollaaaa KSU), something else  funny happened during the Super Bowl.

It started out like this:

We all know where this is going right???

And ended like this:

Wally, your mom probably deserved it... I'm sure of it.

To make your day

Here's a story for your Friday.

I took Margo to Doggie Daycare this morning.

Summary:  Heels + Icy Parking Lot + Margo on a leash = DISASTER

Do you think she stopped pulling me as I was face down on the ground??

And we're back...

My lovely Emily is getting married to her love bird Dave September 16th... in MEXICO!  Don't have to ask me twice.  I'm just wishing it was next week.

I just realized that I never did an engagement post for them like I did for Gina and Kirk, so here it is.  Plus, it makes me warm thinking about Mexico.  Until I turn around and look out of the window into the white cluster F that is our world right now.

Sometime before Christmas (I don't know the exact date- deal) Dave popped the question in a carriage on the plaza over a cup of hot chocolate... and schnapps.  Duh.  He had orignally pretended to propose on our last trip to Mexico after a day of drinking.  That was a mean joke, so it's no surprise her response was 'are you for real??' this time :)

They are getting married on the beach at sunset and decided to forgo the rehearsal dinner and switch it up with a booze cruise.  That's why they are my friends, people.

I'm so happy for both of them, they are honestly the most loving and genuine couple that I know, who just can not wait to be married.

Cheers Em and Dave!

And here they are last time in Mexico...

This may be a little more challenging in a wedding dress...

We all thank you for choosing a destination wedding.  Get me back here A-sap!

Welp, that warmed me up for about 7 whole seconds...

Chili and a Veggie Sub

Here we are last night at my parents for dinner.  Everyone except the pretty picture taker.  That's me, in case you were wondering...
My brother looks thrilled.

My dad had the day off yesterday, as did the rest of the Kansas City metro (everyone but me), so he decided to make some chili and jalapeno cornbread.

Here's what everyone else's plate looked like:

And here's what mine looked like:

That is a veggie sub from D'Bronx.  It was SO good.  It came with another half, and I ate that too.

My dad is still super confused on why I'm eating vegetarian this month.  Like really confused.  I tried to explain it a few different ways, but I'm still not sure he ever got it.

After dinner Tony opened his presents.  One of them was cologne.  I guess I told my mom the wrong kind and we were going back and forth about it, but we were smelling it and really liked it.  As we were putting in our 2cents about what we thought, my brother said 'doesn't it only matter what Tony thinks?'  Which made us chuckle.  Of coarse not silly, my mom and I's opinion is way more important.

Then we watched the Cats pull off a W against Nebraska.  Maybe Wally Judge should have left earlier??  I'm sure going to miss him and those orphan eyes of his though.  As long as my love McGrudy doesn't go anywhere I think I'll be okay :)

Snow Day!!

Yesterday I had a snow day!  Never thought that would happen, but I wasn't complaining especially since I was at Gina's until midnight on Monday drinking wine watching The Bachelor.

Here's a little recap of our cozy and LAZY snowday.

Tony's shoveled driveway- first of four

View out the back - this was still early

Rocked a fire all day.  Margo was bored to tears.

Tony & Margo did some of this...

And I did some of this...

We made homemade pizzas for din din.  Considering it was my first day of no meat Feb., it was a good option.

We used Tony's friend, Heck's, dough recipe:

3 cups flour

1/2 cup sugar
1 tsp salt
1 tbls olive oil
1 cup warm water
1 pack yeast

Mix flour, sugar, and salt together in a mixing bowl.
Mix the yeast in the water and stir until desolved.
Add the olive oil to the flour mixture along with the water and yeast.
Kneed for 7-10 minutes. (seriously, my hands were hurting)
Let rise for 30 minutes and then roll out.
Bake for 10 minutes and then top yo pizza and bake it some more

Top it up!  And have a glass o wine while yer at it

yum yum yum

Bake it up until golden brown.  This might have been pushing 'golden'

Serve with salad and pretend to be healthy...while dipping your pizza in ranch

We finished the night off with some white russians, Tosh.0, and Bev HW Reunion (Camille is a crazy B)

I made it into work about 12:30 today, which is why I was able to bloggity blog.  We are heading to my parents tonight for a late bday celebration for Tony.  My dad's making chili.  Guess I'll be bringing my own dinner.  Veggie sub?  Yes, please.

Stay WARM.  Drive SAFE.

Tony's Bday

Disclaimer: This is a pretty random post.

Yesterday was Tony's birthday.  He's old.  Well, not that old, but older than me so I can say that.

We had people over for the KSU/KU game. I'm not even going to talk about it, so I'll talk about the food I made.  Red chili, white chili, and PW homemade cinnamon rolls.  Yes, I'm bragging.  It's the first time I've made anything from scratch and/or using yeast.  They were fab.  Another success from Ree.  Then I made her chicken noodles, but i'll get to that later.

They make a lot.  A Lot.  I meant to send some home with people as they left, but the booze must have gotten the best of me.

Please make them, you won't regret it!
So one of my NY resolutions isn't off to a great start.  Take more pictures.  Here's the only pictures I have of Tony and I from Saturday... and I obv didn't even take them.

Tony got iced 3 times, this was my one and only

It wasn't a great game for the Good Guys in purple, but we still had a wonderful time catching up with friends!

Here's the last picture of the night.  I think this was around 2 am.  I love it!!

And in color....
These boots are made for walkin'

Here's his gift. (thanks for the idea Vanessa!)  He said 'Yes!  I've seen one of these before' with a puzzled look on his face.  I said, 'Vanessa and Chris' blog'  and he's like 'Yep, you're right'.  So Vanessa, you have another avid reader, my husband. :)
I'm thinking this might come in handy the next couple of days with this KC blizzard talk.  If our fireplace flew freezes shut, we're breaking this baby out :)

Yesterday we had the laziest Sunday ever.  We watched 3 movies.  I haven't watched 3 movies in a day, ever.  Here's my brief review:
The Town:  Loved it!  I would recommend.  Even though Ben Affleck kind of sucks at acting, he's not bad to look at.

Date Night:  Blah.  It had some funny parts, but overall it was pretty bad.

The American:  What the ????  I didn't know what was going on the entire time. And then it ended.  I was super confused.  George Clooney couldn't even make that movie okay.  I wish I could get back that 2 hrs. of my life.

Then last night I made PW Homemade Chicken Noodles and taters for Tony.  He's been asking for them for about 2 months now (i'm a great wife).  Plus, I figured I might as well make them before I go Vegetarian tomorrow.  I was a little disappointed.  Maybe it's the fact that I don't really like chicken & noodles, or maybe I should have added some more spices.  Gina's was way better when I tried hers.  The mash potatoes that Tony made were fab though.  I could have eaten the whole bowl.  Have I mentioned that I love carbs??

So HAPPY BIRTHDAY to my wonderful husband!  It was a fun filled weekend!!

Road Kill

Don't even get me started on bikers in Kansas City pretending to be cars...  (sorry Krista and Heather)

Here's what I witnessed on Friday.  On Nall.  IN the lane that is getting ONTO the Hwy...  this guy was on my left, closest to the 4 other lanes of traffic.  Not to mention there was a sidewalk completely open on my other side.

I was in the process of rolling my window down the rest of the way and saying 'Sir, you are going to get smooshed...' but the light turned green.

Hope he made it to the weekend...
